AvoCacao Pot de Creme...AKA HEALTHY CHOCOLATE
Doesn't this sound soooo fancy? Are you so shocked I came up with this amazing, decadent, chocolate dessert?!
You shouldn't be, because I didn't.
My friend, Nadia Neumann of Body Unburdened, was cool enough to let me share this ridiculously delicious dessert recipe with you from her new book, Glow: The Nutritional Approach to Naturally Gorgeous Skin.
So, yeah, last month I said I was going to really push myself to come up with one dessert recipe/month for the rest of the year and I'm fully cheating but do you care?!
What I love love love about this recipe is that while YES it's dessert and it does have sugar (yes, honey IS sugar), it's also full of healthy fat AND fiber, which will drastically slow down the uptake of sugar into the blood stream.
Why does this matter?
I talk a lot about blood sugar here and the importance of eating PHFF (Protein-Healthy Fat-Fiber) here, (and how it affects your blood sugar) so if you haven't read these posts, I HIGHLY recommend you do. But, since I haven't talked about it in a while, let's do a quick recap of what happens when you eat sugar:
Eat a donut (or.....even a banana by itself) > spike in blood sugar > release of insulin > drop in blood sugar > CARB CRAVING (because when your blood sugar dips, your brain thinks you need more sugar) > running to the store for another donut > etc etc etc
And that's why eating fat and fiber with your carbs (or sugar) is so important! You want to sllooowww this process down as much as possible so that you aren't getting those spikes and drops in blood sugar.
OK moving on - back to Nadia. Glow is basically my new skin bible.
First, it's full of recipes that were made to give you glowing skin.
THINK: Curried Avocado Chicken Salad, Tropical Turmeric Ice Pops, Coconutty Energy Bites, and Strawberry Lemonade Fruit Snacks).... and of course, AvoCacao Pot de Creme, which is filled with skin-supporting vitamin E and healthy fats PLUS raw cacao powder is super anti-inflammatory and is loaded with antioxidants.

AvoCacao Pots de Creme

Prep time: 10 mins | Cook time: 30 mins | Total time: 40 mins
A SUPER decadent, chocolate dessert....that's high in fiber and healthy fat? YES PLEASE.
- 2 avocados
- 3 Tbsp raw honey
- 3 Tbsp extra-virgin coconut oil
- 4 Tbsp raw cacao powder (fav brand is Imlak'esh)
- 1 tsp pure vanilla extract
- Pinch of mineral-rich sea salt
- Peel and pit the avocados.
- In a medium mixing bowl, mash the avocados with a fork.
- Add the raw honey and coconut oil. Stir to combine.
- Transfer the mixture to a blender or food processor and add the vanilla. Blend or process on low speed until you have a smooth and consistent pudding texture.
- Pour the mixture into a bowl or small ramekins and let chill in the refrigerator for at least 30 minutes so it has time to set.
- Sprinkle with the sea salt just before serving.
Fat: 28, Carbohydrates: 29, Sugar: 18, Fiber: 8, Protein: 3
Notes: This is NOT a meal, guys, because it's so low in protein. But it's got really great stats for a super rich, decadent dessert. Treat yo self.
